A really rich one dish meal. Ingredients:
1 1/4 cups ritz crackers, in fine crumbs |
1/4 cup butter, melted |
1 -1 1/2 lb lobster |
3 tablespoons melted butter |
16 ounces softened cream cheese |
1/4 cup mayonnaise |
3 large eggs |
1/3 cup whole milk |
1 1/4 cups shredded swiss cheese |
salt and pepper |
Directions:
1. Combine cracker crumbs and 1/4 cup melted butter. 2. Press crumb/butter mixture onto bottom of a deep dish pie pan or baking dish. 3. Set aside. 4. Filling: Beat cream cheese& mayo until well incorporated. 5. Beat in eggs, one at a time. 6. Slowly add milk, until blended. 7. Stir in lobster. 8. Pour mixture into prepared pan. 9. Sprinkle w/ cheese and S& P. 10. Bake at 300 F for 80 minutes. 11. Turn oven off and let set in the oven for 1 hour. 12. Cool completely on a wire rack. 13. Cover and chill at least 4 to 8 hours in fridge. |
