21/2 cups cooked lobster meat, chopped |
1/4 cup mayonnaise |
1 tablespoon pimientos, minced |
1 tablespoon fresh parsley, minced |
1 teaspoon fresh lemon juice |
1/8 teaspoon salt |
1/8 teaspoon freshly ground black pepper |
1/2 cup heavy cream, whipped |
1 ripe papaya, peeled, seeded and thinly sliced |
to garnish fresh mint sprigs |
Directions:
1. Combine mayonnaise, pimientos, lemon juice, parsley, salt, and pepper in a small bowl. 2. Fold in whipped cream. Add lobster and papaya. Mix gently. 3. Garnish with fresh mint. Serve immediately |
