Lobster Chantilly With Papaya

Ingredients:
21/2 cups cooked lobster meat, chopped
1/4 cup mayonnaise
1 tablespoon pimientos, minced
1 tablespoon fresh parsley, minced
1 teaspoon fresh lemon juice
1/8 teaspoon salt
1/8 teaspoon freshly ground black pepper
1/2 cup heavy cream, whipped
1 ripe papaya, peeled, seeded and thinly sliced
to garnish fresh mint sprigs
Directions:
1. Combine mayonnaise, pimientos, lemon juice, parsley, salt, and pepper in a small bowl.
2. Fold in whipped cream. Add lobster and papaya. Mix gently.
3. Garnish with fresh mint. Serve immediately
