I had 2 lobster tails, applewood smoked bacon, avocados and a big ol' heirloom tomato. This is the delicious result :-) Ingredients:
2 lobster tails, meat removed from shell |
1 avocado, sliced |
4 strips applewood smoked bacon, cooked and chopped |
1 heirloom tomato, sliced |
a couple handfuls organic baby spinach |
2- 3 tbsp classic french dressing |
s&p to taste |

1 fresh lemon, juiced |
2 tablespoons champagne vinegar |
1 tsp country dijon mustard |
1 tbsp shallots, chopped |
fresh chopped herbs, such as tarragon, basil, chives |
olive oil |
pink himalayan salt & fresh ground black pepper to taste |
Directions:
1. I poached my lobster tails in butter with lemon juice. You could grill them, if you prefer. 2. Prepare the dressing, whisking in a slow drizzle of olive oil last, until slightly emulsified. 3. To plate: 4. Toss baby spinach in the dressing and mound on each plate. Add sliced tomato, sliced avocado and lobster tail on each plate. Sprinkle spinach with the bacon and drizzle extra dressing left in bowl over the tomatoes and avocado. |
