I haven't tried this yet but I found this in The Best of Mr. Food 15-Minute Recipes magazine which my daughter gave me before we left for California. It sounded quick and yummy. For the sherry you can substitute chicken broth. Ingredients:
3 tablespoons butter |
1 tablespoon minced onion |
3 tablespoons all-purpose flour |
3 cups milk |
1 cup heavy whipping cream |
1/2 cup dry sherry |
1 teaspoon salt |
1/8 teaspoon paprika |
1 cup cooked lobster meat (about 1 lb.) |
2 tablespoons fresh chives, chopped |
Directions:
1. Melt butter i a dutch oven over medium heat. Saute minced onion 1 minute or until tender. Add flour, stirring until blended. Cook 1 minute stirring constantly. 2. Gradually add milk and next 4 ingredients. Bring just to a simmer; cook, uncovered 15 to 18 minutes or until slightly thickened (do not boil). Stir in lobster and chives. |
