This comes from ABC Jiffy Cookery. I've had it for over 50 years. I haven't tried any of the recipes yet. I'm putting them here so I can find them easier. Ingredients:
1 (14 ounce) can lobsters |
4 tablespoons butter |
1 cup fresh mushrooms or 1/2 cup canned mushroom, sliced |
2 tablespoons green peppers, sliced |
3 tablespoons flour |
1 teaspoon salt |
1/8 teaspoon pepper |
1 cup lobster liquid and milk |
1/2 cup cream |
1 tablespoon lemon juice |
halved toasted english muffins or toast rounds |
Directions:
1. Drain lobster. Reserve liquor, and flake the meat. Melt the butter and add mushrooms and green pepper. Stir constantly over low heat 2 minutes. Stir in the flour and seasonings. Add lobster liquor and milk and cream gradually, while stirring constantly. 2. Beat in lemon juice and add flaked lobster. Heat thoroughly, and add more salt if necessary. 3. Serve over toasted English muffing or toast rounds. Yields 6 medium servings, or 4 generous servings. |
