This is my Welsh grandmother's recipe. She used the word Lobscows for anytime she cleaned out the refrigerator and made a meal. This is a great salad for hot weather. Ingredients:
2 cups frozen peas |
2 cups cooked ham, diced |
sweet onion to taste |
1/4 cup green pepper, chopped |
1/2 cup celery, chopped |
mayonnaise |
prepared oil and vinegar salad dressing |
salad greens |
Directions:
1. In saucepan, cover peas with water. Bring just to a boil over high heat. Immediately drain and rinse in cold water. Drain well. 2. In a bowl, combine peas, ham, onion, green pepper and celery. 3. In a small bowl, whisk together equal amounts of mayonnaise and salad dressing. Season to taste with salt and pepper. 4. Add enough mayonnaise mixture to salad to coat well. Cover and chill several hours. 5. Serve salad on a bed of salad greens. |
