This isn't your normal marshmallow and brown sugar loaded sweet potato. Greek yogurt teams up with honey and black beans to put a healthy spin on boring old sweet potatoes. This also makes a nice side dish. Ingredients:
1 medium sweet potato |
2 tablespoons fat free greek yogurt |
1 teaspoon honey |
2 tablespoons black beans, drained and rinsed |
1 pinch paprika |
Directions:
1. Prick 1 sweet potato with a fork 4 to 5 times. 2. Microwave on a paper towel on a microwave-safe plate for 4 to 5 minutes (before cooking, you can also wrap it loosely with plastic wrap to steam it if you don't have a very powerful microwave). 3. Split open lengthwise and top with Greek yogurt, honey, black beans, and a pinch of paprika. |
