Loaded Redskin Mashed Potatoes |

I love baked potatoes with the skins left on, so why not leave 'em on my mashed potatoes??? ;-) Ingredients:
8 oz bacon, 1/2 dice |
6 lbs redskin potatoes, unpared and quartered |
1 stick butter |
1 tsp coarse grind garlic |
1 (12 oz) carton sour cream |
1 (8 oz) pkg cream cheese, softened to room temperature |
milk or low sodium chicken broth, if needed |
3 tbsps chopped chives |
2 tsps fresh ground black pepper |
salt to taste |
Directions:
1. Fry the bacon until well done; set aside to drain on paper toweling. 2. Cook potatoes until tender in a large stockpot, with enough water to cover; drain and return to pot. 3. Add butter, garlic, sour cream, and cream cheese. Leaving the skins on, coarsely mash with a hand potato masher, adding a little milk or broth if needed.. 4. Fold in bacon, chives, black pepper. 5. Salt, if needed; serve. |
