I wanted to make potato Salad, but I also wanted a twice baked potato. So here it is, the loaded potato salad. A potato salad with all the flavors of a twice baked potato.
Ingredients:
5-6 medium russet potatoes. (skins washed, and then cubed)
1/2 cup mayonnaise.
1/2 cup sour cream.
1/2 tsp. salt.
1/2 tsp. pepper.
5 cooked bacon strips, chopped into small pieces.
1/2 cup sharp cheddar cheese. cubed.
1/3 cup broccoli, chopped into small pieces.
1/4 cup finely chopped onion.
Directions:
1. Boil potatoes in water until tender, drain, and set aside to cool.
2. In a small bowl, combine mayonnaise, sour cream, salt, and pepper.
3. Place cooked potatoes in a large bowl, and stir in the mayonnaise/sour cream mixture.
4. Gently add in the remaining ingredients.
5. Place the salad in the refrigerator, then go watch a movie, do some laundry, visit the In-Laws, or do something for a couple of hours so the flavors in the salad have time to come together.
