This is one of my success recipe stories. I made potato encrusted fish the other night and I didn't want another starch with dinner but I was craving mashed potatoes. I found a bag of frozen cauliflower and said to myself. Read more ... lets see where this will take us . I found bacon pieces in the pantry as well as dried chives and so a star was born. Hubby agrees....great way to trick your kids into having vegetables (and to treat yourself to a healthy version of an ultimate comfort food) Ingredients:
frozen (or fresh) equivalent to 1 head of cauliflower florets |
4 cloves garlic, smashed |
splash of 2% milk (about 3 tbsp) |
1 tbsp margarine |
4 tbsp bacon pieces (or 3 - 4 slices cooked bacon) |
2 1/2 tsp dried chives |
salt and pepper to taste |
1 tsp onion powder |
2 slices american cheese |
Directions:
1. In a medium sauce pan (or whatever size needed to hold florets) add cauliflower and smashed garlic. Cover with water, seasoned liberally with salt, bring to a boil and simmer for 10 minutes, until fork tender. Drain and return to pan. Add all remaining ingredients, except for 1/2 tsp dried chives. Mash until well blended (where it resembles actual mashed potatoes). Transfer to serving dish and top with remaining chives. 2. I can probably guarantee you can trick whoever into believing they are actual mashed potatoes. Tasty and low fat. 3. Comments positive or negative always welcome. Hope you enjoy. |
