Loaded Hashbrown Omelette |

This recipe puts a spin (and LOTS of flavor) into regular frozen hashed brown potatoes. Ingredients:
frozen hash brown potatoes (2 servings) |
1/2 to 3/4 cup grated cheddar cheese |
1/4 to 1/2 cup sour cream |
6 tablespoons chopped bacon or bacon bits |
salt & pepper, to taste |
diced green onions |
Directions:
1. In a large skillet, heat oil and fry hasbrowns. One side of the pan should be thicker in hashbrowns then the other. 2. When the thinner side is done, spread cheese, bacon and then sour cream on the thicker half, like an omelette. Fold in half. 3. Cover and reduce heat, cooking until cheese is melted. 4. Garish with diced green onions (and more bacon if you'd like). Cut in half, serves 2. |
