                                                2 tablespoons vegetable oil  |  
                                                12 ounces simply potatoes® shredded hash browns  |  
                                                1/4 cup sliced green onion  |  
                                                1/2 cup diced red bell pepper  |  
                                                1/4 cup sun-dried tomato  |  
                                                1/4 cup chopped fresh cilantro  |  
                                                1/2 cup shredded cheddar cheese  |  
                                                1/4 cup bacon bits  |  
                                                fresh cilantro leaf, for garnishing  |  
                                                
                     
                    Directions: 
                    
                        
                            
                                1. Heat vegetable oil in a large skillet over medium heat. Add hashbrowns, onions, peppers, tomatoes, and chopped cilantro. Cook for 10-15 minutes, turning frequently, until potatoes are golden brown and peppers are fork tender. Remove from heat and place in a casserole dish. Sprinkle with cheese and bacon bits.
