This is a great way to use up some leftovers with some inexpensive potatoes. Ingredients:
2 1/2 lbs potatoes |
3 1/2 cups skim milk, divided |
4 ounces light cream cheese, softened |
2 tablespoons butter |
3 green onions with tops, sliced |
4 ounces cheddar cheese, grated |
1 teaspoon salt |
1/2 teaspoon pepper |

sour cream |
broccoli |
cauliflower |
Directions:
1. Slice potatoes and pour 1/2 cup milk over them in a microwaveable container. Microwave covered on high for 11 minutes. Stir potatoes, cover and microwave for 10 minutes. Coarsely mash the potatoes. 2. While potatoes are cooking , beat together cream cheese and remaining milk until smooth. Add cream cheese and butter to potatoes and microwave on high for 4 minutes or until hot. 3. Stir in any optional add -ins and salt and pepper. Top with onion and cheese. |
