Ready, Set, Cook! Special Edition Contest Entry. Mash potatoes are so versatile, you will need only 1 pan and 1 pot to make this recipe. Be very careful not to burn your bacon. Must you med-large pot to finish the recipe. Ingredients:
1 (24 ounce) package simply potatoes traditional mashed potatoes |
5 slices bacon, cut in 1 inch pieces |
1/2 red pepper, diced |
1 cup frozen sweet corn |
1/2 bunch green onion, sliced |
Directions:
1. Render bacon in pan until bacon is done, remove bacon bits. remove 4 tlbs of bacon fat to med non-stick pot. 2. Add red pepper, sweet corn, Saute for 5 to 7 mins or until corn is done. 3. Heat Mash potato in micro-wave,)according to package) add to red pepper and corn mixture fold in green onion and bacon bits, sea salt and pepper To Taste (seasoning). 4. Serve. |
