Two meats and two cheeses are the base for the filling for these easy, yummy appetizers. Heat up your favorite marinara for dipping! Ingredients:
2lbs pizza dough(either homemade, ready to form or purchased,raw) |
8oz ricotta cheese(if it's liquidy, drain til it's dry) |
1/2 cup diced pepperoni(i used a stick and diced it) |
1/3 cup ham steak, diced |
8oz fresh mozzarella , shredded |
6oz fresh mushrooms, diced(give these a real quick saute to render the liquid, then drain well.) |
1t fresh italian herbs |
2 cloves garlic, minced |
1 egg or egg white, beaten and mixed with a t or so of water |
marinara or pizza sauce for dipping |
fresh grated parmesan, optional |
Directions:
1. Combine ricotta, pepperoni, ham, mozzarella, mushrooms, herbs and garlic in medium bowl. Set aside. 2. Working with half the dough at a time, lightly dust your work area with cornmeal and roll pizza dough out to about 1/4 inch thick. 3. Using a 4inch round cutter, or improvised cutter(I used a plastic container lid:), cut circles. Pizza dough is stretchy and sticky, especially to itself, so if the circles don't cut through, just take a sharp knife and run along the cut area. 4. Move the circles to a lightly sprayed platter. 5. One at a time, add a heaping spoonful of the filling to the middle of the dough circle and fold the dough over so the ends meet. Remember the aforementioned strechability of the dough, and don't be afraid to load these up with filling. The dough should manage it. :) 6. With a pastry crimper or fork, crimp the edge together. 7. Place back on the sprayed platter and continue with rest of dough until all the filling is used. 8. Brush tops lightly with egg wash. 9. Place on baking stones or sprayed baking sheet. 10. Bake at 425 10-12 minutes, until golden brown. 11. Serve with warm marinara sprinkled with Parmesan cheese, for dipping. |
