My late MIL had a recipe for everything.This is her Beef roasting recipe for tennis players. Basically get the roast in the oven, go play a match and when you get home eat! This should be done with ( least a 3 rib) 1st cut rib roast. Ingredients:
4 lbs beef roast (rib roast) |
black pepper, freshly cracked |
kosher salt |
1 teaspoon garlic powder |
Directions:
1. Bring the roast to room temperature. 2. Preheat the oven to 550 degrees. 3. Rub the meat down with Kosher salt, pepper and garlic powder and place in oven in roasting pan. 4. Roast for 15 minutes per pound. 5. Then TURN OFF THE OVEN and do NOT open the door! 6. Go play a couple of games of tennis, return 2-4 hours later and remove the roast from the oven for perfectly done beef. 7. Voila! |
