Got this in a recipe exchange - haven't gotten the chance to try it yet as I'm waiting for a shot to make it for the whole fam one glorious morning! Ingredients:
2 cups flour |
1 cup sugar |
2 teaspoons baking soda |
1 teaspoon ground cinnamon |
1/2 teaspoon salt |
2 cups grated carrots, packed |
1/2 cup raisins |
1/2 cup grated coconut |
1/2 cup chopped pecans |
1 (8 ounce) can pineapple, drained |
1 cup applesauce |
3 large eggs, lightly beaten |
2 teaspoons vanilla extract |
Directions:
1. Combine first 5 ingredients in a mixing bowl, in a seperate bowl, stir together remaining ingredients; add to flour mixture, stirring until just moistened. 2. Place paper baking cuts in muffin pans. Spoon batter into cups filling 2/3 full. 3. Bake at 350 for 25 minutes or until golden brown. Remove from pans immediately. |
