There are many recipes for Rumaki that all call the use of chicken liver. Not everyone likes chicken livers. This version of Rumaki does not use chicken livers and is different then any Rumaki recipe that I have found. I got the recipe from my sister in law many years ago. I hope you enjoy it as much as I do. Old Sarge USMC
Ingredients:
1 (8 ounce) can water chestnuts (whole in water)
1/2 lb bacon (sliced)
1/4 cup mayonnaise
1/2 cup brown sugar
1/4 cup chili sauce (heinz)
60 wooden toothpicks (they are going into the oven)
Directions:
1. Drain and rinse water chestnuts.
2. Dry water chestnuts on paper towel.
3. Cut water chestnuts in half.
4. Cut bacon strips into thirds.
5. Wrap water chestnut piece in a cut bacon strip.
6. Insert wooden toothpick thru bacon wrapped water chestnut; place in glass baking dish.
7. Sauce:.
8. In a dish, mix brown sugar, mayo and chili sauce, together until smooth.
9. Pour mixed ingredients over bacon wrapped water chestnuts.
10. Bake 350 degrees for 45 minutes.
11. Serve hot.
12. Extra sauce can be mixed and used per personal choice.
