Dainty spice muffins for an autumn brunch. Make as many as you want now, refrigerate batter, bake later. These spicy little bites are moist, because applesauce is one of the ingredients. Oh, delicious. Ingredients:
1 cup soft butter |
2 cups granulated sugar |
2 eggs |
2 cups unsweetened applesauce |
3 teaspoons ground cinnamon |
2 teaspoons ground allspice |
1 teaspoon ground cloves |
1 teaspoon salt |
2 teaspoons baking soda |
4 cups flour |
1 cup nuts, chopped |
confectioners' sugar |
Directions:
1. Lightly grease miniature muffin pans (or larger muffin pans) 2. Cream butter and sugar 3. Add eggs one at a time 4. Mix in applesauce and spices 5. Sift together salt, baking soda and flour 6. Add to applesauce mixture, beat well 7. Stir in nuts 8. Bake at 350 degrees, 8 to 10 minutes 9. Sprinkle with powdered sugar if desired 10. Batter keeps in refrigerator 11. These muffins freeze well 12. Yield: about 80 muffins |
