~Bruschetta~ Ingredients:
1 french bread( about 10 oz.)cut in 1/2 thick slices |
4 large cloves garlic,minced |
2 tablespoons olive oil |
4 cups roma tomatoes,peeled,seeded,chopped |
2 tablespoon balsamic vinegar |
2 tablespoon fresh basil leaves |
1/2 teaspoon black pepper,freshly ground |
1/2 teaspoon salt |
Directions:
1. In sauce pan,saute garlic in oil over medium heat for about 2 minutes(or)until the garlic just begins to brown slightly. 2. Stir in tomatoes and vineger. 3. Stirring often,cook for about 20 minutes (or)until mixture thickens and volume reduces by half. 4. Stir in basil,pepper and salt. 5. ~To Serve: Toast bread slices under broiler for about a minute or so on each side.Brush top of each slice with olive oil.Place 2 teaspoons topping on each slice...broil about 4 minutes (or)until heated through....Serve Immediately. |
