Not as high fat as a regular scone but yummy just the same. This recipe does not make a huge amount so it's great for singles. Dried cranberries can be substituted for the raisins for variety. Ingredients:
2 1/4 ounces quick-cooking oats |
1/2 cup buttermilk baking mix |
1 tablespoon buttermilk baking mix |
1 teaspoon baking powder |
2 tablespoons brown sugar |
1/2 cup milk |
1/4 cup raisins |
2 tablespoons raisins |
Directions:
1. Preheat oven to 425. 2. Whisk together oats, baking mix, baking powder and sugar. 3. Stir in milk and fruit just until combined. 4. Drop dough by 1/4 cup measure onto non stick baking pan. 5. Bake 8 to 10 minutes until golden brown on top. |
