Lite Oatmeal Scones

Not as high fat as a regular scone but yummy just the same. This recipe does not make a huge amount so it's great for singles. Dried cranberries can be substituted for the raisins for variety.
Ingredients:
2 1/4 ounces quick-cooking oats
1/2 cup buttermilk baking mix
1 tablespoon buttermilk baking mix
1 teaspoon baking powder
2 tablespoons brown sugar
1/2 cup milk
1/4 cup raisins
2 tablespoons raisins
Directions:
1. Preheat oven to 425.
2. Whisk together oats, baking mix, baking powder and sugar.
3. Stir in milk and fruit just until combined.
4. Drop dough by 1/4 cup measure onto non stick baking pan.
5. Bake 8 to 10 minutes until golden brown on top.
