Lite Crock Pot Cream Cheese Chicken |

Kind of like a decadent chicken stroganoff. I was really wishing I had some mushrooms to toss in with the sauce! Ingredients:
5 chicken thighs |
1 (2/3 ounce) package italian salad dressing mix |
4 tablespoons butter, melted and divided |
1 small onion, chopped |
1 garlic clove, chopped |
10 1/2 ounces low-fat cream of chicken soup |
8 ounces neufchatel cheese |
1/2 cup chicken broth |
Directions:
1. Place chicken thighs in crock pot. 2. Sprinkle chicken with Italian seasoning and then 2 tbsp of the melted butter. 3. Cook on low for 4-5 hours. 4. Melt the remaining 2 tablespoons butter in sauce pan and saute the onion and garlic. 5. Add Cream of Chicken Soup, neufchatel cheese, and chicken broth. 6. Stir until it forms a smooth consistent sauce. 7. Pour sauce into crock pot and cook one more hour on low. |
