Lite carrot cake muffins from Weight Watchers Ingredients:
1 1/2 c. shredded carrots |
2 1/4 c. flour |
0.33 c. sugar |
0.66 c. crushed pineapple |
2 eggs |
1/4 c. oil |
1 c. 2% milk |
1 tsp cinnamon |
2 tsp baking soda |
Directions:
1. Mix wet ingredients together in one bowl, and dry ingredients together in another, then mix the two just until blended. Fill 15 muffin cups about 3/4's full and cook at 350 degrees for 16 minutes or until lightly browned and puffed. Frost as desired, opt. |
