Lite carrot cake muffins from Weight Watchers
Ingredients:
1 1/2 c. shredded carrots
2 1/4 c. flour
0.33 c. sugar
0.66 c. crushed pineapple
2 eggs
1/4 c. oil
1 c. 2% milk
1 tsp cinnamon
2 tsp baking soda
Directions:
1. Mix wet ingredients together in one bowl, and dry ingredients together in another, then mix the two just until blended. Fill 15 muffin cups about 3/4's full and cook at 350 degrees for 16 minutes or until lightly browned and puffed. Frost as desired, opt.
