I searched through over 100 recipes for broccoli salad on this site and didn't find one that exactly matched this one. I came up with this dressing by taking the traditional mayo sugar dressing and liteing it up a bit. My husband who does not like raw broccoli even likes this salad. The main reason I'm posting it is to get the nutritional content. Hope you all enjoy!
Ingredients:
10 cups chopped broccoli florets
5 cups red grapes
1/2 red onion, finely chopped
1/2 cup pine nuts
1 cup low-fat mayonnaise
1 cup plain nonfat yogurt
2 tablespoons cider vinegar
1/2 cup splenda sugar substitute
Directions:
1. Mix together salad ingredients.
2. Whisk together dressing ingredients.
3. Add dressing to salad.
4. Chill for at least 4 hours.
