Lite and Easy Cabbage Salad |

This is one of my favorite Spring time salads. Goes well with grilled chicken or pork chops. Ingredients:
1 (16 ounce) package cabbage coleslaw mix |
2 bunches green onions, thinly sliced |
1/2 cup slivered almonds |
1/4 cup sesame seeds |
1 (3 ounce) package chicken-flavored ramen noodles, reserve the seasoning packet |
1/3 cup olive oil |
1/3 cup splenda sugar substitute |
1/3 cup white vinegar |
Directions:
1. In a large bowl, combine the cabbage, green onions, almonds and sesame seeds. 2. Pour the ramen noodles into a zip-lock baggie, and crush with a rolling pin. Reserve until serving time. 3. To make the dressing, mix the olive oil, splenda, vinegar and reserved flavor packet. Stir well to combine. 4. Pour over the cabbage mix and stir well. ( The dressing may be added right before serving time if you wish.). 5. Pour the crushed noodles over the top right before serving. |
