A different take on the same old dips. Serve as dip for chilled fresh beet, cucumber, celery, carrot, green pepper or turnip sticks. Cauliflowerets or green onions work well, too.
Ingredients:
1/2 small carrot
1/2 small onion
1/4 green pepper
a few sprigs of parsley
2 tbs vinegar
1 cup mayonnaise
1/2 cup pot cheese (or farmer cheese, ricotta or even cottage cheese, drained)
1/4 tsp salt
1/2 tsp curry powder
Directions:
1. Process all. Chill. OR..
2. Chop first 4 ingredients very fine.
3. Combine with remaining ingredients.
