Good comfort food!! Ingredients:
24 large mushroom caps (stems removed and set aside) |
2 t. olive oil |
1/4 cup minced celery |
1/2 cup chopped onion |
mushroom stems, chopped |
4 slices turkey bacon, diced |
1/4 cup green pepper, chopped |
1/2 cup heavy cream |
1/2 cup swiss cheese, grated |
1 cup cooked rice |
parmesan cheese |
Directions:
1. In a large frypan, heat oil. 2. Add celery, onion, mushroom stems, turkey bacon, and green pepper. 3. Saute for 5-10 minutes until vegetables are soft. 4. Reduce heat to low; add cream and cheese. Stir until cheese melts. 5. Add cooked rice; remove from heat. 6. Place mushroom caps on greased baking sheet. 7. Stuff each cap with 1 tablespoon of filling. 8. Sprinkle Parmesan cheese on top. 9. Bake in a preheated 375 degree oven for 30 minutes. 10. ENJOY!! |
