1/4 cup olive oil |
1/4 cup chopped onion |
1/4 cup chopped green pepper |
1 garlic clove, crushed |
1 (6 ounce) can tuna, drained |
3 tablespoons fresh lemon juice |
12 ounces linguine |
1 cup arugula |
Directions:
1. Heat oil in a medium skillet; add onion and green pepper; saute 5 minutes. 2. Add garlic, saute 1 minute. 3. Stir in tuna and lemon juice. 4. Meanwhile, cook the linguine in plenty of boiling salted water, about 12 minutes. Drain. 5. Toss with tuna sauce and arugula. Serve. |
