Linguine with Garlic and Red Pepper |

Ingredients:
4 ounces uncooked linguine |
1 tablespoon extra-virgin olive oil |
1/4 teaspoon crushed red pepper |
2 garlic cloves, minced |
1/4 teaspoon salt |
chopped fresh flat-leaf parsley (optional) |
Directions:
1. Cook pasta according to package directions, omitting salt and fat. Drain pasta in a colander over a bowl, reserving cooking liquid. 2. Heat oil in a medium skillet over medium heat. Add pepper and garlic; cook 1 minute or until fragrant. Remove from heat; let stand 5 minutes. Add pasta and salt to oil mixture in pan; toss to coat. Add 1/4 cup (or more) reserved cooking liquid to keep pasta moist. Sprinkle with parsley, if desired. |
