Linguine With Fresh Tomatoes |

A newsletter recipe. On my list to make with all of my fresh cherry tomatoes this year!! Ingredients:
1 lb linguine |
3 garlic cloves, minced |
1 teaspoon red pepper flakes |
1/4 cup olive oil |
4 cups cherry tomatoes, halved |
1/4 cup fresh basil, chopped |
1/4 cup fresh parsley, chopped |
1/4 cup red wine vinegar |
1 pinch salt |
1/4 cup parmesan cheese, freshly grated |
Directions:
1. Cook linguine in a large pot of boiling salted water until al dente. 2. Saute the garlic and red pepper flakes in the olive oil for 1 minute. 3. Add the tomatoes, basil, parsley, red wine vinegar, and salt; cook for about 5 minute. 4. Toss together the cooked linguine and tomato mixture in the skillet. Add a little of the pasta liquid to make a sauce, if desired. 5. Sprinkle with the parmesan cheese. |
