Linguine With Clams, White Wine & Tomatoes |

My favorite linguine sauce. Spicy but not overpowering. Ingredients:
2 (6 ounce) cans clams |
2 cups dry white wine |
1 cup olive oil |
6 garlic cloves, minced |
1 cup onion, finely diced |
1 (28 ounce) can diced tomatoes |
2 tablespoons red pepper flakes |
1/2 cup fresh parsley |
1 tablespoon oregano |
salt and pepper |
1 1/2 lbs linguine |
Directions:
1. Saute' onions in oil, when half cooked, add garlic. Cook 1 minute, add wine and reduce by 1/2, add tomatoes, chili peppers, clams parsley & oregano, adjust seasonings to taste and cook 5 minutes. 2. Cook linguine in salted boiling water. 3. Spoon sauce over linguine. |
