Pasta with Fingerling Potatos (done like clams; i.e., fake clams) Ingredients:
1 medium red onion |
3 tablespoons extra virgin olive oil |
4 cloves garlic |
1 tablespoon red pepper flakes |
1 pound potatos |
1 cup diced tomatos |
1/2 cup wine, white, dry |
1 pound linguine |
1/2 cup fresh parsley |
Directions:
1. Dice onion and cook in large saucepan with oil. Add garlic, red pepper flakes, tomatoes, and potatoes. Season with salt and pepper and cook until potatoes are tender. 2. Bring 8 quarts of well-salted water to a boil. Add pasta and cook until almost done (about 1 minute less than directions). 3. Drain pasta, reserving 1 cup of cooking water, and add pasta to potato mixture. 4. Raise heat to high and cook for about 45 seconds, until pasta is well-amalgamated with other ingredients; add a bit of pasta water if mixture is too dry. Stir in parsley and serve immediately. |
