Pasta with Fingerling Potatos (done like clams; i.e., fake clams)
Ingredients:
1 medium red onion
3 tablespoons extra virgin olive oil
4 cloves garlic
1 tablespoon red pepper flakes
1 pound potatos
1 cup diced tomatos
1/2 cup wine, white, dry
1 pound linguine
1/2 cup fresh parsley
Directions:
1. Dice onion and cook in large saucepan with oil. Add garlic, red pepper flakes, tomatoes, and potatoes. Season with salt and pepper and cook until potatoes are tender.
2. Bring 8 quarts of well-salted water to a boil. Add pasta and cook until almost done (about 1 minute less than directions).
3. Drain pasta, reserving 1 cup of cooking water, and add pasta to potato mixture.
4. Raise heat to high and cook for about 45 seconds, until pasta is well-amalgamated with other ingredients; add a bit of pasta water if mixture is too dry. Stir in parsley and serve immediately.
