I love baked beans of all kinds, this one is a little different but always gets a good review. This recipe can easily be doubled and works well in the crockpot. Ingredients:
6 slices applewood bacon |
1 green pepper, diced fine |
1 sweet onion, diced |
1 (6-ounce) can crushed pineapple, drained |
3/4 cup ketchup |
1/2 cup brown sugar |
2 tablespoons worcestershire sauce |
2 (14.5 ounce) cans pork and beans in tomato sauce, partially drained |
Directions:
1. In a large skillet cook the bacon until crisp. Remove from the pan and crumble. Pour off most of the drippings leaving just enough to saute the pepper and onion. 2. Saute the pepper and onion for about 5 minutes, or until softened. 3. Add the pineapple, ketchup, brown sugar and Worcestershire, mix well. 4. Add the beans and bacon to the pan and stir to combine. Pour into a casserole dish and bake at 300 degrees for about an hour. 5. LindySez: You can also put this into your crockpot and cook on low for a couple of hours or more. |
