this recipe is from the Mount Dora Historic Inn in Mount Dora, Florida.. i'm glad I found a quick bread using mangoes... Ingredients:
2 cups regular flour |
1/4 tsp. salt |
3/4 tsp. baking soda |
3/4 tsp. baking powder |
1 1/4 cups sugar |
2 eggs |
2 stick of butter |
1/4 cup milk |
2/3 cup mashed mango (or peaches) |
3/8 cup chopped nuts |
2 oz. peach schnapps |
Directions:
1. In medium sized bowl add all dry ingredients and mix together. 2. Add eggs, butter, milk and blend lightly (just to wet - do not over mix as it makes the dough tough). 3. Fold in Mangos. 4. Place into standard, well-greased loaf pan. 5. Drink 2 oz Peach Schnapps. 6. Cooking: 7. Bake at 350 degrees for approximately 50-60 minutes. 8. Brush with honey and orange juice (1 Tbsp each mixed ) 9. Let stand on baking rack for 15 minutes before serving. |
