I love making this when I am making other Mexican dishes, like tacos, enchilladas and burritos... Goes great with just about anything! Ingredients:
1 lb ground beef |
2 large onions, chopped |
1/4 teaspoon cayenne pepper |
1 (1 1/4 ounce) package taco seasoning mix |
1 (10 ounce) can ro-tel tomatoes and green chilies |
3 cups rice, cooked |
salt and pepper, to taste |
8 ounces mozzarella cheese |
Directions:
1. Cook rice. 2. Cook the ground beef until no longer pink. 3. Add onions, cayenne pepper, and taco mix. Mix well, and cook until onions are done. 4. Add Ro-tel tomatoes, and rice. Mix well. 5. Add salt and pepper, and mix well. 6. Add Mozzarella cheese, and mix in well. 7. When cheese is melted serve. 8. Note:Cooking time includes 25 minutes to make rice. |
