Linda's Once-Baked Biscotti |

My sister developed this recipe and I made it for the first time last Christmas. The biscotti turned out great, despite the fact that I mistakenly baked them twice. Ingredients:
2 cups flour |
1 1/3 cups sugar |
2 teaspoons baking powder |
2 large eggs |
1 teaspoon grated lemon rind |
1/4 cup anisette |
1/4 cup rum |
1 1/2 cups whole raw almonds |
Directions:
1. Mix all ingredients in order listed. 2. Grease and flour a cookie sheet. 3. Form the dough into a rounded loaf. If the loaf is a bit flat, it's no problem- just decrease the cooking time slightly. 4. Bake at 350 degrees for 1 hour. 5. Slice loaf with a heavy knife. Don't worry if there is some crumbling as you slice. Once the loaf cools, the slices will firm up and stay together. |
