Here is a little twist on the traditional meatloaf. I hope you enjoy it! Ingredients:
1 1/2 lbs lean ground beef |
1 medium onion, chopped fine |
1 cup italian style breadcrumbs |
2 eggs |
1/2 cup milk |
1 cup rice, uncooked |
3 cups water |
1 cup ketchup, divided |
1 cup tomato sauce, divided |
1 teaspoon salt |
1/2 teaspoon pepper |
Directions:
1. Put beef and onions together in a lg. 2. bowl. 3. Mix well. 4. Add bread crumbs, eggs, and milk, and mix well. 5. Add rice and water, and mix well. 6. It will be soupy. 7. Add 1/2 c. 8. ketchup, and 1/2 c. 9. tomato sauce, salt and pepper, and mix well. 10. I use my hands to mix it together. 11. Put mixture in a 9x13 casserole dish, shaping into a loaf. 12. In a bowl, mix the remaining ketchup and tomato sauce together. 13. Pour over top of meatloaf. 14. Bake in 350 oven for 1 hr. 15. and 15 mins. 16. ,or until no longer pink in the middle. |
