a healthy twist on a recipe from America's test kitchen uses turkey kielbasa (chourico would add a spicy kick), garbnzo beans , tomatoes and fresh beet greens Ingredients:
1 lb turkey kielbasa |
1 medium onion, minced |
3 garlic cloves, minced |
20 ounces diced tomatoes |
32 ounces chicken broth |
2 (16 ounce) cans garbanzo beans |
2 tablespoons fresh thyme |
1 teaspoon paprika |
Directions:
1. saute diced turkey kielbasa in 2 TBSP olive oil until browned. 2. removed and drain on paper towel. 3. saute onions until wilted 4. add garlic, fresh thyme and paprika cook for about 30 seconds. 5. add broth, diced tomatoes and chick peas. 6. let simmer together for about 10 minutes. 7. remove about 2 cups of soup and puree with immersion blender. 8. add puree back to rest of soup. 9. add turkey kielbasa back to soup pot. 10. season to taste with salt and papper and enjoy. |
