Linda's Chicken and Rice Soup |

Ingredients:
2 lbs chicken |
1 1/2 cups brown rice |
1 cup onion, chopped |
3 stalks celery, chopped |
3 carrots, chopped |
2 cloves garlic, minced |
1/4 cup cilantro, fresh |
1/4 cup parsley, fresh |
1 cup corn |
2 cups mushrooms |
2 tsp salt |
1 tsp pepper |
Directions:
1. Put chopped onions, celery, carrots, rice, garlic, cilantro, parsley in a large soup pot. 2. Add chicken pieces (bone-in - about 3 pounds or 1 whole chicken). 3. Add about 2 quarts of water. 4. Bring to a boil, reduce heat, cover, and simmer for 1 hour. Skim fat off as needed. Add water if needed. 5. After 1 hour, pull out the chicken only, drain in a colander until cool enough to handle. Discard skin and bones, shred chicken and return to soup. 6. Add mushrooms, corn, salt and pepper, heat and serve. |
