This recipe came from one of my co-workers from ARC. When she had time, she would make these for our Christmas potluck lunch. They are the only lumpia I have ever had that combined pork and beef. Servings and yield are guesstimates. Ingredients:
2 lbs ground pork |
1 lb ground beef |
1 onion, finely chopped |
1 bunch scallion, finely chopped |
1 tablespoon garlic, finely chopped |
salt and pepper |
1 carrot, finely shredded |
4 -5 eggs |
cilantro, chopped |
wonton wrapper |
Directions:
1. Mix all ingredients adding one egg at a time until the consistency of meatloaf. Using wonton wrappers of your choice, place a small amount of the meat on the wrapper and roll per instructions with the wrappers. Fry in hot oil until done, golden brown. 2. Variation - you may add water chestnuts, celery or soy sauce to the meat mixture if you choose. |
