I could not stand sweet potatoes until my friend made them this way. Wow! Easy and delicious. Thanks Katie. Ingredients:
4 sweet potatoes |
3 tablespoons butter |
4 limes, juice of |
1/2 teaspoon garlic powder |
salt and pepper |
1 (15 ounce) can black beans |
Directions:
1. Roast sweet potatoes at 350 until tender (about an hour). 2. Halve potatoes lengthwise and remove the soft insides. Save the skins and try to keep them intact. 3. Mash together the potato, butter, lime, garlic powder, salt and pepper. 4. Re-fill skins with mixture and bake another 10 minutes. 5. Serve with heated black beans. |
