A favorite finger food dessert . Can be made with lemons also.
Ingredients:
2 sticks margarine
2 cups flour
1/2 cup confectioners sugar
4 whole eggs, beaten
1/2 cup fresh persian lime juice
2 cups sugar
1/2 cup flour
1/2 teaspoon baking powder
4 drops green food coloring
Directions:
1. Preheat oven to 350
2. Base:
3. Melt the margarine and mix in the flour and sugar. Press into a 9x12x2 greased pan.
4. Bake at 350 for about 20 minutes. Remove from the oven.
5. You want this crust to look firm but not brown.
6. Meanwhile, make Topping:
7. Mix the eggs, sugar, juice, flour, food coloring and baking powder together and pour it over the baked base. The base does not have to cool any.
8. Bake the Base and the topping together for about 25 more minutes at 350 degrees.
9. Cool and sprinkle with confectioners sugar. DO NOT CUT UNTIL VERY VERY COOL then cut into squares.
