Made with leftover Grilled Lime Shrimp, Lime Shrimp Rolls are ou take on the lobster roll and make a tasty quick-fix supper. Ingredients:
grilled lime shrimp and vegetable rice |
1/2 cup chopped celery |
1/3 cup mayonnaise |
1/2 teaspoon lime zest |
1 tablespoon fresh lime juice |
1/2 teaspoon chopped fresh tarragon |
2 tablespoons butter, melted |
1 garlic clove, pressed |
4 hot dog buns |
4 lettuce leaves |
lime wedges |
Directions:
1. Preheat oven to 375°. Coarsely chop reserved shrimp from Grilled Lime Shrimp and Vegetable Rice. Stir together celery, mayonnaise, lime zest, lime juice, tarragon, and shrimp in a bowl. Stir together melted butter and garlic; spread on cut sides of hot dog buns. Bake 7 to 8 minutes or until toasted. Place 1 lettuce leaf in each roll; top with shrimp mixture. Serve with lime wedges. |
