Lime Salmon with Soy Sauce |

âMy husband and I are busy real estate agents, but we still take time to cook together,â writes Laurie LaClair of North Richland Hills, Texas. âThis tender salmon has a lovely lime-soy flavor, plus itâs fast to fix.â Ingredients:
2 salmon fillets (6 ounces each) |
1/4 cup lime juice |
2 tablespoons brown sugar |
2 tablespoons butter, melted |
2 tablespoons soy sauce substitute |
1 tablespoon minced fresh parsley |
1 teaspoon garlic powder |
1/2 teaspoon pepper |
1 medium lime, sliced |
1 teaspoon cornstarch |
1 teaspoon water |
Directions:
1. Place salmon in an ungreased 8-in. square baking dish. In a small bowl, combine the lime juice, brown sugar, butter, Soy Sauce Substitute, parsley, garlic powder and pepper; pour over fillets. Top with lime slices. 2. Bake, uncovered, at 350° for 20-23 minutes or until fish flakes easily with a fork. Remove salmon and keep warm. Pour pan juices into a small saucepan; bring to a boil. In a small bowl, combine cornstarch and water until smooth; stir into pan. Return to a boil; cook and stir for 2 minutes or until thickened. Serve with salmon. Yield: 2 servings. |
