Another pickled onion recipe... so good on sandwiches. My favorite is salmon on dark bread with these pickled onions on top, which would also be a great appetizer if cut up. Ingredients:
1 large red onion, thinly sliced |
1/4 cup fresh lime juice |
1 tablespoon olive oil |
1/2 teaspoon salt |
2 tablespoons chopped fresh cilantro |
1 teaspoon chopped fresh oregano or 1/2 teaspoon dried oregano |
Directions:
1. Mix all ingredients and let onion marinate at least 3 hours at room temp. 2. Will keep up to 4 days, covered in frig. |
