I bake muffins every Sunday morning, so I'm always trying different ingredients to make them interesting. These citrus muffins are my husband's favorite. Ingredients:
2 cups king arthur unbleached all-purpose flour |
1 cup sugar |
2-1/2 teaspoons baking powder |
1/2 teaspoon salt |
2 eggs |
1/4 cup milk |
1/3 cup vegetable oil |
3 tablespoons lime juice |
1-1/2 teaspoons grated lime peel |
Directions:
1. In a bowl, combine the first four ingredients. In another bowl, beat the eggs, milk, oil, lime juice and peel. Stir into dry ingredients just until moistened. 2. Fill paper-lined muffin cups two-thirds full. Bake at 400° for 18-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Yield: 1 dozen. |
