Lime-Marinated Tomatoes with Cilantro |

Here's an easy marinated tomato dish to pair with the pot pie. Plum tomatoes taste and look pretty good right through winter. If not, see the Note following the recipe. Ingredients:
6 plum tomatoes, cut into wedges |
3 tablespoons vegetable or olive oil |
1 1/2 to 2 tablespoons fresh lime juice |
1 tablespoon chopped fresh cilantro |
1/2 teaspoon garlic salt |
1/4 teaspoon grated lime rind |
1/8 teaspoon pepper |
Directions:
1. Place tomato wedges in a glass dish. Combine oil and remaining ingredients; stir well. Pour over tomato wedges. Cover and chill at least 1 hour. 2. Note: If fresh tomatoes are not at their peak, substitute 2 (14 1/2-ounce) cans tomato wedges, drained. |
