Another tried and true delight I obtained from one of my neighbor's cookouts. This is an incredible recipe and so easy to make. Have the recipe on hand, you will be asked for it when serving to guests. Ingredients:
1/4 cup lime juice |
2 tablespoons canola oil |
1 tablespoon white vinegar |
1 teaspoon ground cumin |
1/4 teaspoon salt |
1 jalapeno sliced |
1-1/4 pounds boneless skinless chicken breasts trimmed of fat |
Directions:
1. Whisk lime juice, oil, vinegar, cumin and salt in a small bowl then stir in jalapeno. 2. Place chicken in a shallow baking dish and pour marinade over it turning to coat both sides. 3. Cover and refrigerate for at least 1 hour turning once. 4. Preheat grill to high heat then oil grill rack. 5. Grill chicken for 4 minutes per side. 6. Let cool slightly then slice thinly crosswise. 7. Serve warm or chilled. |
