Lime In De Coconut Cupcakes |

These sweet yet tart beauties are enhanced further with the addition of flaky coconut. Forget muffin tops, the tops of these cupcakes come out so wonderfully chewy and buttery, they don't even need a frosting. I am including what I dabbed on there, though, so feel free to experiment! Read more ! :) Ingredients:
1 cup butter, softened |
1 1/2 cups granulated sugar |
2t vanilla |
3 eggs |
2 1/2 cups flour |
1/2t baking powder |
1/2t baking soda |
1/2t salt |
1 cup limeade concentrate(shake well before pouring into measuring cup |
1 cup shredded coconut(i used unsweetened) |
for coconut lime frosting |
1 stick butter, softened |
4 cups powdered sugar |
1t vanilla |
enough coconut milk* to thin to desired consistency(if you don't want to open a can of coconut milk, maybe replace the vanilla with coconut extract, and use regular milk) |
zest from 1 large lime |
*i don't recommend lite coconut milk, as it may break down ,slightly, when making frosting |
Directions:
1. Beat butter with sugar until light and fluffy. 2. Add eggs, one at at time, beating well between each. 3. Add vanilla and mix, well. 4. Combine flour, baking powder, salt and baking soda then add that alternately with the limeade, mixing slowly and scraping sides of the bowl(do not beat)until all is added. 5. Fold in coconut. 6. Spoon into papered muffin tins(I like to fill them nearly to the top to get a nice full cupcake :) 7. Bake at 350 for 20-23 minutes, turning once. (for both pans, I baked for 12 minutes, turned, and baked for 10 more, and they came out perfectly) 8. Let cool in muffin in for about 5 minutes, then remove to cooling rack. See Photo 9. Continue with remaining batter. (mine made 20 full cupcakes) 10. Let cool completely before frosting, if frosting :) See Photo 11. For Coconut Lime Frosting 12. Combine butter, sugar and vanilla with enough milk to reach desired consistency, by beating well. 13. Add lime zest and mix thoroughly. 14. Add colored or toasted coconut, jelly beans or other Easter candies, if desired :) |
