Thic chicken dish is low in calories and fat. The combination of flavors really hits the spot. The homemade salsa is basic but a delicious accompaniment. Plan ahead, it needs to marinate 2-4 hours. Ingredients:
1/3 cup fresh lime juice |
3 garlic cloves, minced |
1/2 teaspoon ground ginger |
1/2 teaspoon dried red pepper flakes |
1/4 teaspoon salt (optional) |
4 (4 ounce) boneless skinless chicken breast halves |
2 cups diced fresh plum tomatoes |
1 cup diced green pepper |
1/2 cup diced red onion |
1 tablespoon chopped fresh cilantro |
1 tablespoon olive oil |
1 tablespoon fresh lime juice |
2 garlic cloves, minced |
1/4 teaspoon salt |
Directions:
1. In a glass bowl, combine lime juice, 3 cloves minced garlic, ginger, red pepper, and salt. 2. Cut chicken into 1 inch strips. Add the chicken to marinade and toss to coat. Cover and refrigerate 2-4 hours. 3. Meanwhile, combine the salsa ingredients; cover and refrigerate until serving. 4. Drain chicken and discard marinade. 5. Cook in a large nonstick skillet until no longer pink, about 10 minutes. 6. Serve with salsa. |
